Espresso & Chocolate Base

Brew espresso
Brew two shots (about 60 ml) of hot espresso using an espresso machine, Moka pot, or very strong brewed coffee if espresso isn't available. Pour the hot espresso into a heatproof mug or small mixing bowl.

Make chocolate paste
In a small bowl, combine 1 tablespoon unsweetened cocoa powder and 1 teaspoon granulated sugar. Add 2 tablespoons hot water and whisk vigorously until a smooth, lump-free chocolate syrup/paste forms. Taste and add a little more sugar if you prefer sweeter.

Stir the chocolate paste into the hot espresso until fully combined and smooth. Keep warm.
Milk & Froth

Heat milk
Pour 8 oz (about 240 ml) whole milk into a small saucepan. Add 1 teaspoon vanilla extract. Heat gently over medium-low heat until the milk is steaming and small bubbles form around the edge (between 150–160°F / 65–70°C). Do not boil.

Froth milk
Froth the hot milk using a steam wand, handheld electric frother, or French press: if using a French press, pump vigorously for 20–30 seconds to create microfoam. Aim for a creamy, velvety foam with small bubbles.

Hold back the foam with a spoon and pour the hot milk into the espresso-chocolate mixture, then spoon the foam on top to fill the cup.

If using whipped cream: instead of spooning foam, top with 2 tablespoons whipped cream for a richer mocha.
Garnish

Finish the mocha by sprinkling 1 teaspoon of chocolate shavings or a light dusting of cocoa powder on top of the foam or whipped cream.

Serve immediately while hot. Stir before drinking to blend the chocolate and espresso if desired.
