Bean & Egg Filling

    Warm the refried beans

    Place 1.5 cups refried beans in a small saucepan over low heat with 1 tsp olive oil. Stir frequently until warmed through, about 5 minutes. If beans are very thick, add 1-2 tbsp water and stir to loosen so they spread easily.

    Scramble the eggs

    Crack 4 large eggs into a bowl, add 2 tbsp whole milk, 1 tsp salt, and 1/2 tsp black pepper. Whisk until combined and slightly frothy.

    Cook the eggs

    Heat a nonstick skillet over medium-low heat and add 2 tbsp unsalted butter. Once butter is melted and foamy, pour in the egg mixture. Let eggs sit undisturbed for 10–15 seconds, then gently push the set edges toward the center with a spatula, folding the eggs while they cook. Continue folding and sweeping until eggs are softly set but still moist, about 2–3 minutes total. Remove from heat immediately to avoid overcooking.

    Prepare tortillas

    Warm 4 large flour tortillas so they are pliable: wrap in a damp paper towel and microwave for 20–30 seconds, or heat individually in a dry skillet over medium heat 20–30 seconds per side.

    Assemble burritos

    Lay one warm tortilla flat. Spoon about 3/8 cup (roughly 3 tbsp) of warmed refried beans down the center of the tortilla, spreading into a 1-inch wide strip lengthwise. Top the beans with about 1/4 of the scrambled eggs (about 1/2 cup) and 3/8 cup shredded cheese. Add 2 tbsp salsa and a sprinkle (about 1/2 tbsp) of chopped cilantro if using, and a few drops of hot sauce if desired.

    Fold and finish

    Fold the short sides of the tortilla over the filling, then fold one long edge over and roll tightly to form a burrito. Repeat for remaining tortillas. Optional: heat a skillet over medium heat and place burritos seam-side down. Cook 1–2 minutes per side until golden and the cheese is melted, pressing gently with a spatula to seal. Remove from pan.

    Cut burritos in half if desired and serve immediately with extra salsa or hot sauce on the side.
