Stir the potatoes and continue to cook, stirring every 2–3 minutes, until tender and golden brown, about 8–10 more minutes total. Adjust heat as needed to avoid burning.

In a medium bowl, crack 4 large eggs. Add 2 tbs whole milk, 1/2 tsp salt, and 1/4 tsp black pepper. Whisk until fully combined and slightly frothy—this yields fluffy scrambled eggs.

Warm the flour tortillas: heat a clean skillet over medium, brush each side lightly with melted butter (or heat directly dry), and warm 20–30 seconds per side until pliable and slightly browned in spots. Keep warmed tortillas wrapped in a clean kitchen towel to remain soft.

Lay one warm tortilla flat. In the lower third of the tortilla place approximately 1/4 of the potato-sausage mixture (about 3/4 cup), then top with 1/4 of the scrambled eggs and shredded cheese (about 1/4 cup). Add a spoonful (about 1–2 tbs) of salsa or hot sauce and a sprinkle of chopped cilantro and/or a dollop of sour cream if using.

Fold the sides of the tortilla inward over the filling, then roll tightly from the bottom up to form a burrito. Press seam-side down in the skillet over medium heat for 1 minute per side to seal and create a lightly crisp exterior, if desired.

Repeat with the remaining tortillas and fillings. Serve immediately while warm with extra salsa, hot sauce, or sour cream on the side.
