Prepare tortillas
Stack the corn tortillas and cut into 1/2-inch strips, then roughly tear the strips into bite-size pieces (about 1-inch). Pat the torn pieces dry if they feel damp.

Crisp tortillas
Heat a large nonstick or cast-iron skillet over medium-high heat. Add 2 tablespoons vegetable oil and swirl to coat. When shimmering, add torn tortilla pieces in a single layer (work in two batches if needed). Fry, stirring occasionally, until they are golden-brown and crisp in parts, about 4–6 minutes. Remove with a slotted spoon to a paper towel-lined plate and reserve. If any pieces brown faster, lower heat to medium.

Sauté aromatics
Reduce heat to medium. Add remaining 1 tablespoon oil and 1 tablespoon butter to the same skillet. Add finely chopped half onion and minced half jalapeño (seeded for milder heat). Sauté until softened and translucent, 3–4 minutes.

Make eggs
In a bowl, whisk together 6 eggs, 2 tablespoons milk, 1 teaspoon salt, and 1/2 teaspoon black pepper until blended and slightly frothy. Pour eggs into the skillet with the softened aromatics over medium-low heat. Let eggs set briefly around the edges (15–20 seconds), then gently scramble with a spatula, stirring and folding until they are about 70% cooked and creamy, about 1–2 minutes.

Combine with tortillas
Return the crisp tortilla pieces to the skillet and fold them into the soft scrambled eggs. Sprinkle 3/4 cup shredded cheese and 2 tablespoons chopped cilantro over the eggs. Continue cooking, stirring gently, until the cheese melts and eggs finish cooking but remain moist, about 1 minute. Taste and adjust seasoning as needed. Remove from heat and keep warm.
Refried beans

Heat a small skillet or saucepan over medium heat and add 1 tablespoon lard or vegetable oil. Add 1 minced garlic clove and sauté for 30 seconds until fragrant. Add the 15 oz can of pinto beans with their liquid, 2 tablespoons water (or reserved bean liquid), 1/2 teaspoon salt, and 1/4 teaspoon ground cumin.

Simmer for 3–4 minutes to warm and loosen the beans. Using a potato masher or the back of a spoon, mash the beans to your desired texture (smooth or slightly chunky). If the beans are too thick, add up to 1–2 tablespoons more water and stir. Taste and adjust seasoning. Keep warm until plating.
Homemade salsa (fresh)

Add 1 tablespoon fresh lime juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir and taste; let sit at room temperature for 10–15 minutes to allow flavors to meld. Adjust salt or lime as needed.
Plating & garnish

Divide the migas onto 4 plates (about 1.5 cups each). Spoon a generous serving of warm refried beans alongside each portion (about 1/3–1/2 cup per plate). Place 2–3 tablespoons of fresh salsa on the side or in a small ramekin.

Garnish each plate with a sprinkle of crumbled queso fresco (optional), remaining cilantro if desired, and lime wedges. Serve immediately while eggs and tortillas are hot and crisp.
