If making potatoes, scrub and dice the potato into 1/2-inch cubes. If making salad, halve cherry tomatoes and thinly slice the cucumber. Set chosen side ingredients aside.

Cook protein

Choose bacon or sausage. For bacon: heat a large skillet over medium and lay bacon slices in a single layer. Cook 3–6 minutes per side depending on thickness until crisp or desired doneness. Transfer to a paper towel-lined plate to drain. For sausages: heat skillet over medium, add sausages and cook 8–12 minutes turning often until evenly browned and cooked through (internal temp 160°F/71°C for pork). Keep warm on low heat or tent with foil.
Potato side (if chosen)

Pan-roasted breakfast potatoes
Heat a nonstick or cast-iron skillet over medium-high heat. Add 1.5 tablespoons olive oil. When shimmering, add diced potatoes in a single layer. Let cook undisturbed 4–5 minutes to get a golden crust, then stir/turn and continue cooking 8–10 minutes until tender and golden. Sprinkle paprika, garlic powder, 1/2 tsp salt and 1/4 tsp pepper halfway through cooking and toss to coat. Finish with chopped parsley if using and keep warm.
Salad side (if chosen)

Quick side salad
Combine mixed greens, halved cherry tomatoes and sliced cucumber in a bowl. Whisk 1 tsp olive oil with 1 tsp lemon juice or vinegar, a pinch of salt and a grind of pepper, then toss dressing with the salad just before serving.
Eggs

Decide how you want the eggs (scrambled, fried, or over-easy). For scrambled: whisk 3 eggs with 1 tablespoon milk or cream, 1/4 tsp salt and 1/8 tsp pepper. Heat a nonstick skillet over medium-low and add 1 tbs butter. Pour eggs in and let set briefly, then gently stir with a spatula until soft curds form, about 2–3 minutes. For fried or over-easy: heat 1 tbs butter in skillet over medium, crack eggs into the pan, season with salt and pepper. For sunny-side-up cook until whites set, about 2–3 minutes. For over-easy, cook until whites set then flip carefully and cook 15–30 seconds more for runny yolks; longer for firmer yolks.
Toast

Toast one slice of whole wheat bread to desired darkness. Spread 1 teaspoon butter or margarine on the warm toast.
