Bacon

    Cook bacon in a cold skillet: arrange 4 strips in a single layer in a cold large skillet. Add 2 tablespoons water (this helps even cooking) and set over medium heat. As the pan heats, the water will steam and then evaporate; let the bacon cook, turning occasionally, until evenly browned and crisp, about 8–10 minutes depending on thickness.

    Transfer bacon to a paper towel-lined plate to drain and keep warm. Reserve skillet (do not wash) for eggs if desired.

Bagel & spreads

    Split bagels and toast: while bacon cooks, slice 2 bagels and toast to desired doneness in a toaster or under a broiler. If using, brush cut sides lightly with 1 tsp butter and toast in a skillet until golden.

    Spread cream cheese: when toasted, spread about 1.5 tablespoons of softened cream cheese on the cut side of each bottom bagel half (reserve remaining cream cheese if making two sandwiches).

Eggs & dairy

    Whisk eggs: in a bowl, crack 3 large eggs and add 2 tablespoons milk, 1 teaspoon salt, and 1/2 teaspoon black pepper. Whisk until well combined and slightly frothy.

    Cook scrambled eggs: heat 1 teaspoon olive oil or nonstick spray in the reserved skillet (or a clean nonstick skillet) over medium-low heat. Pour in the egg mixture. Let eggs sit undisturbed for 10–15 seconds, then gently stir with a silicone spatula, folding eggs from the edges toward the center. Cook slowly, stirring occasionally, until soft curds form and eggs are just set but still moist, about 2–3 minutes.

    Add cheddar: sprinkle 1 ounce shredded cheddar over the eggs in the last 30 seconds of cooking. Fold gently so the cheese melts into the eggs. Remove from heat.

Assembly & serve

    Assemble sandwich: place the cream cheese–spread bottom half of each toasted bagel on a plate. Divide the cheesy scrambled eggs evenly between the two bagel bottoms.

    Top with bacon: place 2 cooked bacon strips atop the eggs on each sandwich.

    Add optional garnishes: if using, add a couple slices of tomato and a small handful (about 2 tablespoons) of spinach or arugula on top of the bacon. Drizzle 1/2 teaspoon hot sauce per sandwich if desired.

    Finish and serve: cap with the top bagel halves. Cut sandwiches in half if desired and serve immediately while warm.
