Method
Bacon
- 1
Preheat oven to 400°F (200°C). Arrange bacon slices in a single layer on a rimmed baking sheet lined with foil or parchment. Bake for 12–18 minutes until crisp to your liking, turning the pan halfway if needed for even cooking.
- 2
Remove bacon and transfer to a paper towel-lined plate to drain. Reserve bacon fat on the sheet if you like for additional flavor, or discard. Keep warm.
Bagel & Toasting
- 3
Split the bagels and toast cut-side up in a toaster or under a broiler until golden and slightly crisp (about 2–4 minutes depending on appliance).
- 4
If desired, immediately spread 1/2 tablespoon butter on each toasted half so it melts in, then evenly spread 1 tablespoon (2 tbs total across both halves of each sandwich) of cream cheese on the bottom halves and reserve the remaining cream cheese for the top halves or for serving.
Scrambled Eggs
- 5
In a medium bowl, crack the 4 eggs and add 2 tablespoons milk or half-and-half, 1/2 teaspoon salt (from the total listed) and 1/8 teaspoon black pepper. Whisk until fully blended and slightly frothy.
- 6
- 7
- 8
Stir in 2 tablespoons of the grated cheddar into the eggs off the heat so it melts into the curds. Taste and adjust seasoning with the remaining salt and pepper if needed.
Assembly
- 9
On each toasted bottom bagel half spread approximately 1 tablespoon cream cheese (or to taste).
- 10
Divide the scrambled eggs evenly between the two bagel bottoms, piling them modestly (about half the egg mixture per sandwich).
- 11
Top the eggs with 3 slices of cooked bacon per sandwich, then sprinkle the remaining 1 tablespoon cheddar evenly over the bacon so it melts slightly from the warm eggs (or briefly return assembled open-faced sandwiches to a low broiler for 30–45 seconds if you prefer melted cheese).
- 12
- 13
Place the top bagel halves (spread with remaining cream cheese if desired) on each sandwich and press gently. Serve immediately.
