    Prepare the Spinach

    Wash the fresh spinach thoroughly under cold water. Remove any tough stems and chop it roughly.

    Cook the Onions and Garlic

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

    Combine Spinach with Onion Mixture

    Add the chopped spinach to the skillet with the onions and garlic. Cook until the spinach is wilted and moisture has evaporated, about 5-7 minutes. Remove from heat and let cool slightly.

    Mix in Cheeses and Seasoning

    In a mixing bowl, combine the wilted spinach mixture with crumbled feta cheese, chopped dill, the egg, salt, and black pepper. Mix until well combined.

    Preheat your oven to 375°F (190°C).

    Prepare Phyllo Dough

    Melt the butter in a small saucepan. Lay out the phyllo pastry sheets on a clean, dry surface. Keep the sheets covered with a damp towel to prevent them from drying out.

    Layer Phyllo Sheets

    Take one sheet of phyllo and brush it lightly with melted butter. Place another sheet on top and brush with butter again. Repeat this process until you have 4-5 layers.

    Fill and Fold

    Spoon a portion of the spinach filling along one edge of the layered phyllo. Fold the sides in and roll the phyllo over the filling to form a log or triangle shape. Place the filled spanikopita on a baking sheet lined with parchment paper.

    Brush the tops of the spanikopita with more melted butter. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
