Making the Pastry Crust

    Prepare the Dough

    In a large bowl, mix the flour, sugar, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

    Incorporate Egg Yolks

    Add the egg yolks and vanilla extract to the flour mixture. Mix until the dough starts to come together. If the dough is too dry, add a tablespoon of cold water.

    Chill the Dough

    Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preparing the Filling

    Mix the Filling Ingredients

    In a medium bowl, combine the fruit preserves, lemon juice, and ground cinnamon. Stir until well mixed and set aside.

Assembling the Pasta Flora

    Preheat the oven to 350°F (175°C).

    Roll Out the Dough

    On a lightly floured surface, roll out two-thirds of the chilled dough to fit into a 9-inch tart pan. Press the dough into the pan and trim the edges.

    Roll out the remaining dough and cut it into strips. Lay the strips in a lattice pattern over the fruit filling. Alternatively, you can crumble the remaining dough over the top.

    In a small bowl, mix the ground almonds (or walnuts) with the sugar. Sprinkle this mixture evenly over the lattice topping.
