Making the Pastry Crust

Prepare the Dough
In a large bowl, mix the flour, sugar, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

Add the egg yolks and vanilla extract to the flour mixture. Mix until the dough starts to come together. If the dough is too dry, add a tablespoon of cold water.

Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

In a medium bowl, combine the fruit preserves, lemon juice, and ground cinnamon. Stir until well mixed and set aside.

On a lightly floured surface, roll out two-thirds of the chilled dough to fit into a 9-inch tart pan. Press the dough into the pan and trim the edges.
