Panna Cotta Base

    Prepare Gelatin

    In a small bowl, sprinkle the gelatin powder over the cold water. Allow it to sit for about 5 minutes until it becomes bloomed (gelatin will absorb the water and swell).

    Heat Cream Mixture

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling. Remove from heat.

    Add Vanilla and Gelatin

    Stir in the vanilla extract and the bloomed gelatin into the hot cream mixture. Stir until the gelatin is completely dissolved.

    Chill the Mixture

    Pour the mixture into individual ramekins or a large serving dish. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

Berry Sauce

    Cook the Berries

    In a medium saucepan, combine the mixed berries, granulated sugar, and water. Heat over medium heat, stirring gently until the sugar dissolves and the mixture starts to simmer.

    Thicken the Sauce

    Allow the mixture to simmer for about 10 minutes, or until the berries have broken down and the sauce has thickened slightly. Remove from heat and stir in the lemon juice.

    Cool the Sauce

    Let the berry sauce cool to room temperature, then refrigerate until ready to serve.
