Method

Preparation

  1. 1

    Prepare the Fruits

Wash the apples thoroughly under running water to remove any dirt or pesticides. Core and chop the apples into quarters, keeping the skins on for added flavor. Slice the lemons in half and set aside.

  2. 2

    Prepare the Ginger

Peel the ginger root with a vegetable peeler and then slice it thinly.

Cooking

  1. 3

    Combine Ingredients

In a large pot, combine the chopped apples, sliced lemons, ginger, water, and apple juice. Stir well to mix the ingredients.

  2. 4

    Add Spices

Add the cinnamon sticks, star anise, cloves, and brown sugar to the pot. Stir until the sugar is dissolved.

  3. 5

    Simmer the Mixture

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer for about 1 hour, stirring occasionally.

  4. 6

    Strain the Cider

After an hour of simmering, remove the pot from heat. Use a fine mesh strainer or cheesecloth to strain the mixture into a large bowl or pitcher, pressing down on the solids to extract as much liquid as possible.

  5. 7

    Sweeten to Taste

Taste the strained cider and stir in honey if desired for additional sweetness. Adjust with more sugar or honey according to your preference.

Serving

  1. 8

    Chill or Heat

You can serve the cider warm by pouring it directly into mugs or let it cool and refrigerate for a cold refreshing drink. Serve with a cinnamon stick or a slice of lemon for garnish.
