Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water and yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine flour and salt. Mix well.

  3. 3

    Combine Ingredients

Add the activated yeast mixture to the flour mixture. Stir until a dough forms.

  4. 4

    Knead the Dough

On a floured surface, knead the dough for about 10 minutes until smooth and elastic.

  5. 5

    Let It Rise

Place the dough in a greased bowl, cover with a cloth, and let it rise for about 1 hour or until it doubles in size.

Filling Preparation

  1. 6

    Sauté Vegetables

In a skillet, heat a tablespoon of oil over medium heat. Add chopped onions and minced garlic, sauté until translucent.

  2. 7

    Add Spinach and Mushrooms

Add spinach and sliced mushrooms to the skillet. Cook until mushrooms are tender and spinach is wilted. Season with salt and pepper to taste.

  3. 8

    Mix in Cheese

Remove the skillet from heat and stir in the cheese until melted and well combined.

Assembly and Baking

  1. 9

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 10

    Shape the Hats

Once the dough has risen, punch it down and divide it into equal portions. Roll each portion into a circle about ¼ inch thick.

  3. 11

    Fill and Fold

Place a spoonful of the filling on one half of the dough circle, then fold the other half over to create a hat shape. Seal the edges by pressing with a fork.

  4. 12

    Prepare for Baking

In a small bowl, beat the egg and brush it over the top of each hat. Sprinkle sesame seeds on top.

  5. 13

    Bake

Place the hats on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.

  6. 14

    Cool and Serve

Remove the hats from the oven and let them cool for a few minutes before serving.
