Prepare Cold Brew
In a large jar or pitcher, combine the coarse coffee grounds and cold water. Stir gently to ensure all the coffee grounds are saturated.

Steep
Cover the jar and let it steep in the refrigerator for at least 12 hours, preferably 18-24 hours for a richer flavor.

Strain
After steeping, strain the coffee through a fine mesh sieve or coffee filter into a clean pitcher. Discard the grounds.
Cherry Syrup

Cook Cherries
In a medium saucepan, combine the pitted and halved cherries, granulated sugar, and water. Bring to a boil over medium heat.

Simmer
Reduce the heat and let the mixture simmer for about 10-15 minutes until the cherries soften and the syrup thickens slightly.

Cool and Strain
Remove from heat and let the syrup cool. Once cooled, strain the syrup through a fine mesh sieve to remove solids, pressing to extract as much liquid as possible.
To Serve

Assemble Drink
Fill a glass with ice cubes. Pour in 1 cup of cold brew coffee and add 1/4 cup of the cherry syrup. Stir to combine.

Top with milk or cream to your liking and drizzle with chocolate syrup.
