Prepare the Filling

    Mix the Filling Ingredients

    In a medium mixing bowl, combine the chopped walnuts, chopped pistachios, granulated sugar, and ground cinnamon. Mix well until all the ingredients are evenly distributed.

Prepare the Phyllo Dough

    Thaw Phyllo Dough

    If using frozen phyllo dough, thaw it in the refrigerator overnight or at room temperature for about 1 hour before use.

    Prepare the Baking Pan

    Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan with some of the melted butter.

    Layer the Phyllo

    Place one sheet of phyllo dough in the baking pan and brush it with melted butter. Repeat this process, layering and buttering each sheet, until you have about 8 sheets layered.

    Add the Filling

    Spread the nut filling evenly over the layered phyllo. Continue layering more phyllo sheets (about 8 more) on top of the filling, brushing each sheet with melted butter.

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes, making sure to cut all the way through to the bottom.

Bake the Baklava

    Place the baking pan in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and crisp.

Prepare the Syrup

    Make the Syrup

    In a saucepan, combine the water, granulated sugar, honey, vanilla extract, and lemon juice. Bring to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes until slightly thickened.

    Cool the Syrup

    Remove the syrup from heat and let it cool to room temperature.

Finish the Baklava

    Pour the Syrup

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava.
