Reina Pepiada Preparation

    Prepare the Filling

    In a bowl, combine shredded chicken, avocado, mayonnaise, lime juice, salt, and black pepper. Mix well and set aside.

Carne Mechada Preparation

    Cook the Meat

    In a pot, heat oil and sauté onions, garlic, and green bell pepper until soft. Add flank steak and brown on all sides.

    Simmer

    Pour in tomato sauce, cumin, salt, and black pepper. Cover and simmer for about 2 hours or until the meat is tender. Remove the meat, shred it, and return it to the pot to mix with the sauce.

Perico Preparation

    Sauté Vegetables

    In a skillet, heat oil over medium heat. Sauté diced onions, green bell pepper, and tomato until softened.

    Beat the eggs and add them to the skillet. Cook, stirring gently until the eggs are just set. Season with salt and black pepper.

Arepa Preparation

    In a bowl, combine masarepa, water, and salt. Mix until a dough forms. Let it rest for 5 minutes.

    Divide the dough into balls and flatten them into discs. Cook on a hot griddle for 5-7 minutes per side until golden brown.

    On a large platter, arrange portions of reina pepiada, carne mechada, perico, cheese, and split arepas. Serve warm.
