Prawns and Phyllo Pastry

Method

Preparation of Prawns

    Marinate the Prawns

    In a bowl, combine prawns, minced garlic, paprika, salt, and black pepper. Allow to marinate for 15 minutes.

    Prepare Phyllo Pastry

    Preheat the oven to 200°C (400°F). Lay one sheet of phyllo pastry on a clean surface and brush with melted butter. Place another sheet on top and brush with butter again. Repeat until you have 4 layers.

    Wrap Prawns

    Place a marinated prawn at one end of the phyllo stack and roll it up tightly. Use a bit of melted butter to seal the edges. Repeat with remaining prawns and phyllo sheets.

    Bake Prawns

    Arrange the wrapped prawns on a baking sheet and brush the tops with additional melted butter. Bake for 20-25 minutes or until golden brown.

Cooking Black Rice

    Cook Black Rice

    In a pot, bring 2 cups of water and 0.5 tsp of salt to a boil. Add the black rice, reduce the heat to low, cover, and simmer for 30-35 minutes or until rice is tender.

Making Avocado Emulsion

    Blend Avocado Emulsion

    In a blender, combine ripe avocado, lemon juice, olive oil, and salt. Blend until smooth and creamy.
