Marinate the Chicken
In a large bowl, combine the buttermilk, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Add the chicken pieces, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Flour Mixture
In a shallow dish, combine the all-purpose flour with a pinch of salt and a little cayenne pepper for extra heat. Mix well.

Heat the Oil
In a large, heavy-bottomed skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken
Remove the chicken pieces from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the flour mixture, pressing to adhere the flour to the chicken.

Fry the Chicken
Carefully place the coated chicken pieces in the hot oil, working in batches if necessary. Fry for about 12-15 minutes or until golden brown and cooked through, turning occasionally. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

Once cooked, remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil. Serve hot with spicy cilantro sauce.
