1. Preheat the Oven
Preheat your oven to 350°F (175°C).
2. Prepare the Filling
In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Stir in shredded chicken, ground cumin, garlic powder, salt, and black pepper. Cook for about 5-7 minutes until heated through.
3. Assemble the Enchiladas
Take a corn tortilla, add a portion of the chicken mixture, and roll it up. Place the rolled tortilla seam-side down in a baking dish. Repeat with remaining tortillas and filling.
4. Add Salsa Verde and Cheese
Pour the salsa verde evenly over the rolled enchiladas. Sprinkle the shredded cheese on top.
5. Bake
Cover the baking dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
6. Serve
