Preparation

    Ferment the Blueberries

    In a clean jar, combine fresh blueberries, salt, and water. Seal tightly and let sit at room temperature for 3 days to ferment.

    Make Chive Oil

    Blend chives and olive oil until smooth. Strain through a fine sieve to obtain chive oil.

    Prepare Spinach Gomae Dressing

    In a bowl, mix miso paste, sesame seeds, rice vinegar, honey, and sesame oil until well combined.

    Blanch the Spinach

    Bring a pot of salted water to a boil. Add fresh spinach and blanch for 1-2 minutes. Drain and rinse under cold water. Squeeze out excess water and chop coarsely.

Cooking

    Cook Duck Tenders

    Season duck tenders with salt and pepper. Heat olive oil in a pan over medium-high heat. Cook duck tenders for about 5-6 minutes on each side until golden and cooked through.

Assembly

    Combine and Serve

    In a bowl, mix the chopped spinach with the gomae dressing. Plate the spinach gomae, top with duck tenders, fermented blueberries, and drizzle with chive oil. Garnish with spruce tips.
