    Cook Quinoa

    In a medium saucepan, add 1 cup of rinsed quinoa and 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Fluff with a fork and set aside.

    Prepare Seafood

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Cook Fish and Shrimp

    Add the fish fillets to the skillet and cook for 3-4 minutes on each side, depending on thickness. Add the shrimp and cook for an additional 2-3 minutes until they turn pink and opaque. Season with salt, black pepper, and fresh herbs.

    Add Vegetables

    Add asparagus and cherry tomatoes to the skillet during the last 5 minutes of cooking. Squeeze lemon juice over the seafood and vegetables.

    Plate the Dish

    Serve the cooked quinoa on a plate, topped with the seafood and vegetable mixture. Garnish with lemon slices and additional fresh herbs if desired.
