    Prepare the Vegetables

    Wash and scrub the fingerling potatoes and baby turnips. Cut the fingerling potatoes in half lengthwise and trim the tops off the baby turnips. Slice the green garlic thinly.

    Cook the Potatoes

    In a pot, bring salted water to a boil. Add the fingerling potatoes and cook for about 10-12 minutes until tender. Add the baby turnips to the pot for the last 5 minutes of cooking. Drain and set aside.

    Sear the Halibut

    In a large skillet, heat the olive oil over medium-high heat. Season the halibut fillets with salt and black pepper. Add the fillets to the skillet and cook for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork. Remove from the skillet and keep warm.

    Make the Lemon Butter Sauce

    In the same skillet, reduce the heat to medium and add the butter. Once melted, add the sliced green garlic and sauté for about 2 minutes until fragrant. Stir in the lemon juice and cook for an additional minute.

    Serve

    Plate the halibut, and arrange the fingerling potatoes and baby turnips around it. Drizzle the lemon butter sauce over the fish and vegetables. Enjoy!
