Pork Sliders

Prepare the Pork Mixture
In a large bowl, combine ground pork, pineapple juice, soy sauce, minced garlic, ground ginger, and chopped green onions. Mix well until fully combined.

Shape the Sliders
Form the pork mixture into small patties, about the size of a golf ball.

Cook the Sliders
Heat a skillet over medium heat. Cook the patties for about 5-7 minutes on each side or until they are fully cooked and reach an internal temperature of 160°F.

Assemble the Sliders
Slice Hawaiian rolls in half and place a lettuce leaf on each bottom half, followed by a pork slider patty. Top with the other half of the roll.
Spam Musubi

Cook the Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions, typically using 2 cups of water for 2 cups of rice.

Prepare the Spam
Slice the Spam into 8 equal pieces. In a skillet over medium heat, cook the Spam for 2-3 minutes on each side until lightly browned.

Season the Rice
In a small bowl, mix soy sauce, rice vinegar, and sugar. Once the rice is cooked, gently stir in the soy sauce mixture while the rice is still warm.

Assemble the Musubi
Place a sheet of nori on a clean surface. With wet hands, spread a layer of sushi rice over the nori, leaving the top edge clear. Place a slice of Spam on the rice and fold the nori over to form a rectangle. Wrap tightly and slice into pieces.
Pineapple Salsa

Combine the Ingredients
In a medium bowl, combine diced fresh pineapple, diced red bell pepper, finely chopped red onion, chopped cilantro, and lime juice. Mix well.

Serve
Chill the salsa for at least 30 minutes before serving to let the flavors meld together. Serve alongside pork sliders and Spam musubi.
