    Prepare the Pork

    In a large bowl, combine the cubed pork shoulder with soy sauce, vinegar, minced garlic, bay leaves, black peppercorns, and salt. Mix well and marinate for at least 30 minutes, preferably overnight in the refrigerator for enhanced flavor.

    Prepare the Potatoes

    While the pork is marinating, peel and cube the potatoes. Set aside.

    Start Cooking the Pork

    In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the sliced onions and sauté until translucent, about 3-4 minutes.

    Add the marinated pork (along with the marinade) to the pot. Stir well to combine with the onions and cook for about 5-7 minutes until the pork is browned on all sides.

    Pour in the cup of water and bring the mixture to a boil. Lower the heat to a simmer, cover, and cook for about 45 minutes, stirring occasionally.

    Taste the adobo and adjust the seasoning with additional salt and sugar if necessary. Remove from heat.
