Prepare the Katsu

Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Bread the Chicken
Set up a breading station with three shallow bowls: one with flour, one with beaten egg, and one with panko breadcrumbs. Dredge each chicken breast in flour, dip it in the egg, and coat it with panko breadcrumbs.

Fry the Chicken
Heat vegetable oil in a large skillet over medium heat. Once hot, add the breaded chicken and fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Sauté the Vegetables
In the same skillet, remove excess oil, leaving about 1 tablespoon. Add chopped onion, diced carrot, and diced potato. Sauté for 5-7 minutes until softened.

Add Aromatics
Add minced garlic and ginger to the vegetables and sauté for another 1-2 minutes until fragrant.

Create the Curry Base
Stir in the curry powder and cook for 1 minute, then add the broth, soy sauce, honey, salt, and pepper. Bring to a simmer and cook for 10 minutes.

Thicken the Sauce
In a small bowl, mix cornstarch and water until smooth. Add this mixture to the curry sauce and stir continuously until the sauce thickens, about 2-3 minutes.
Serve the Dish

Plate the Dish
Serve the fried chicken katsu over a bed of steamed rice, and ladle the curry sauce over the chicken. Garnish with chopped green onions.
