    Prepare the Chicken

    Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, black pepper, paprika, and Italian seasoning. Once the oil is hot, add the chicken breasts and cook for 5-7 minutes on each side until they are golden brown and cooked through. Remove from skillet and set aside.

    While the chicken is cooking, chop the bell peppers, zucchini, onion, and garlic into bite-sized pieces.

    Sauté the Vegetables

    In the same skillet, add the chopped onion and garlic, and sauté for 2-3 minutes until the onion becomes translucent. Add the bell peppers and zucchini, and sauté for another 5-7 minutes until they are tender.

    While the vegetables are cooking, rinse the quinoa under cold water. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.

    Combine Ingredients

    Once the quinoa is cooked and the vegetables are tender, add the quinoa to the skillet with the sautéed vegetables. Stir to combine and let heat through for about 2 minutes.

    Slice and Serve

    Slice the cooked chicken breasts and arrange them on top of the quinoa and vegetable mixture in the skillet. Sprinkle with feta cheese and fresh parsley before serving.
