Method
Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Rinse the chicken breasts under cold water, then pat them dry with paper towels. Place them between two pieces of plastic wrap and pound them to an even thickness of about 1/2 inch.
- 2
Set Up Breading Station
Set up a breading station with three shallow bowls: one with flour mixed with salt and black pepper, another with beaten eggs, and the last with a mixture of Italian breadcrumbs and grated Parmesan cheese.
Breading and Cooking
- 3
Bread the Chicken
Coat each chicken breast in flour, shaking off excess. Next, dip it in the beaten eggs, and finally coat it with the breadcrumb and Parmesan mixture. Ensure each piece is well-coated.
- 4
Fry the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side or until golden brown. You may need to do this in batches to avoid overcrowding the pan.
Baking
- 5
Assemble the Dish
In a baking dish, spread 1 cup of marinara sauce evenly on the bottom. Place the fried chicken breasts on top, then spoon the remaining marinara sauce over each piece. Sprinkle shredded mozzarella cheese on top.
- 6
Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through (internal temperature should reach 165°F or 75°C).
- 7
Cool and Serve
Remove from the oven and let it cool for a few minutes before serving. Serve hot with pasta or a side salad.
