Method

Preparation

  1. 1

    Prepare the Pork Shoulder

Trim excess fat from the pork shoulder, then cut into large chunks. Season with Hawaiian sea salt, ensuring all sides are well coated.

  2. 2

    Chop the Cabbage

Remove the outer leaves of the cabbage, cut it into quarters, and slice it into thin strips. Set aside.

  3. 3

    Mince the Garlic

Peel and finely mince the garlic cloves.

Cooking

  1. 4

    Cook the Pork

In a large pot, add the seasoned pork shoulder and pour in the soy sauce and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 2 hours, or until the pork is tender.

  2. 5

    Add the Cabbage

After 2 hours, add the chopped cabbage and minced garlic to the pot. Stir well to combine with the pork and its juices.

  3. 6

    Simmer

Cover the pot again and let the mixture simmer for an additional 30-45 minutes, or until the cabbage is tender and the flavors have melded together.

  4. 7

    Adjust Seasoning

Taste the stew and adjust the seasoning with black pepper and red chili flakes, if desired.

Serving

  1. 8

    Serve

Ladle the Kalua cabbage and stew into bowls and garnish with chopped green onions, if using. Enjoy your Aloha Tuesday!
