Prepare the Noodles
Soak the sweet potato glass noodles in warm water for about 15 minutes until softened. Drain and set aside.

Sauté Aromatics
In a large skillet or wok, heat the sesame oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Add Peas and Corn
Stir in the peas and white corn. Cook for another 3 minutes until the peas are bright green.

Incorporate Noodles
Add the soaked sweet potato noodles to the skillet, then pour in the tamari, aji amarillo paste, and white wine. Toss everything together and cook for an additional 3-5 minutes until heated through.

Finish with Spinach and Cilantro
Remove the skillet from heat and stir in the fresh spinach and chopped cilantro. Allow the residual heat to wilt the spinach.

Plate the stir fry and garnish with noodle crisps for added crunch.
