Prepare the Chicken and Marinade

Slice the chicken breast into strips and marinate it with aji amarillo paste, tamari, and minced garlic for about 20 minutes.

Cook the Fries

Peel and cut the gold potatoes into fries. Heat oil in a deep pan and fry the potatoes until golden brown. Drain and set aside.

Sauté the Vegetables

In a large skillet, heat a tablespoon of oil over medium heat. Add sliced red onion and sauté until translucent. Then add chopped roma tomatoes and cook until softened.

Cook the Chicken

Add the marinated chicken to the skillet with the vegetables. Sauté until the chicken is cooked through, about 5-7 minutes.

Deglaze and Finish

Pour in the white wine and let it simmer for a couple of minutes until it reduces slightly. Season with salt and pepper to taste.

Serve

On a plate, serve a portion of the garlic rice, top with the chicken saltado mixture, and place the fries on the side. Garnish with fresh cilantro.
