Cook the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.

Add the Vegetables

Finely chop the rocoto chili peppers (removing seeds for less heat if desired) and add to the skillet. Stir in chopped tomatoes, capers, kalamata olives, and fresh spinach. Cook for about 5-7 minutes until the spinach wilts and the mixture is heated through.

Combine with Pasta

Add the cooked pasta to the skillet with the sauce. Toss to combine and season with salt and black pepper to taste. Cook for an additional 2-3 minutes.

Serve

Plate the pasta and generously drizzle with Huancaina cheese sauce. Top with shaved Parmesan cheese before serving.
