    Prepare the Garlic Rice

    In a medium pot, bring 2 cups of water to a boil. Add the jasmine rice, minced garlic, and salt. Reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked. Remove from heat and let it sit covered for 5 minutes.

    Season the Jackfruit

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the shredded jackfruit, cumin, paprika, black pepper, and salt. Cook for about 10 minutes, stirring occasionally, until the jackfruit is heated through and slightly caramelized.

    Pickle the Onions

    In a small bowl, combine thinly sliced red onion and apple cider vinegar. Let it sit for at least 10 minutes to pickle.

    Fry the Plantains

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced plantains and fry for about 3-4 minutes on each side until golden brown and crispy. Remove from oil and drain on paper towels.

    In a serving bowl, layer the garlic rice, seasoned jackfruit, black beans, aji verde, pickled onions, and fried plantains. Garnish with fresh cilantro before serving.
