    Prepare the Vegetables

    Slice the onion, bell peppers, and tomato into thin strips. Mince the garlic cloves.

    Cook the Jackfruit

    In a large skillet or iron griddle, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the jackfruit, breaking it apart with a fork.

    Add Seasonings

    Pour in the white wine, aji amarillo paste, and tamari. Stir well to combine and let it simmer for about 5 minutes.

    Add Vegetables

    Add the sliced onion, bell peppers, and tomato to the skillet. Cook for an additional 10-15 minutes, stirring often, until the vegetables are tender and the jackfruit is heated through.

    Serve

    Serve the jackfruit fajitas hot with cooked rice, black beans, pico de gallo, and warm flour tortillas on the side.
