Rabbit Preparation

Brine the Rabbit
In a large bowl, combine apple cider vinegar, salt, black pepper, garlic powder, onion powder, and paprika. Submerge the halved rabbit in the brine and refrigerate for at least 4 hours or overnight.

Preheat the Oil
In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).
Frying the Rabbit

Fry the Rabbit
Remove the rabbit from the brine, pat dry, and carefully place it in the hot oil. Fry for about 10-15 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Basil Lime Aioli

Make the Aioli
In a small bowl, mix together mayonnaise, chopped basil, lime juice, and minced garlic until well combined. Set aside.
Gold Potato Fries

Fry the Potatoes
In the same hot oil, add the cut gold potatoes in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.
