    Prepare the Ingredients

    Slice the bell peppers and onion, dice the tomatoes, and mince the garlic.

    Sauté the Vegetables

    In a large iron skillet, heat olive oil over medium-high heat. Add the sliced onions and cook until they are translucent.

    Add Peppers and Garlic

    Add the bell peppers and minced garlic to the skillet. Sauté until the peppers are tender.

    Deglaze with White Wine

    Pour in the white wine and let it simmer for about 2-3 minutes, scraping the bottom of the skillet.

    Add Tomatoes and Seasonings

    Stir in the diced tomatoes, aji amarillo, tamari, salt, and black pepper. Cook for an additional 2-3 minutes.

    Warm the Tortillas

    In a separate pan, warm the flour tortillas on low heat until they are pliable.

    Assemble the Fajitas

    Serve the sautéed mixture on the warm tortillas. Top with cooked rice, black beans, and pico de gallo.
