Marinate the Chicken
In a large bowl, mix together the olive oil, agave syrup, chipotle peppers, lime juice, minced garlic, salt, and black pepper. Add the chicken breast cut into 1-inch cubes and toss well to coat. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare the Skewers
Soak wooden skewers in water for about 20 minutes to prevent burning. Thread the marinated chicken onto the skewers, leaving a little space between each piece.

Cook the Skewers
Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Make Aji Amarillo Mashed Potatoes
Boil 1 lb of potatoes until tender. Mash with 1/4 cup of milk, 2 tbs of butter, and 2 tbs of aji amarillo paste. Season with salt to taste.

Serve
Plate the aji amarillo mashed potatoes, top with grilled chicken skewers and garnish with pico de gallo. Drizzle any leftover agave chipotle sauce over the top if desired.
