Prepare the Pork Loin

Slice the pork loin into thin strips. In a bowl, combine olive oil, cumin, paprika, salt, and black pepper to create a marinade. Add the pork strips and coat well. Let marinate for at least 30 minutes.

Cook the Garlic Rice

In a saucepan, heat a little olive oil over medium heat. Add minced garlic and sauté until fragrant. Add rice and stir for 1 minute. Then, add 2 cups of water and a pinch of salt. Bring to a boil, reduce heat to low, cover, and cook for 15 minutes or until rice is tender.

Prepare Black Beans

In a small pot, heat the canned black beans over medium heat. Add a dash of cumin and salt to taste. Allow to simmer for about 5 minutes.

Cook the Chicharron

In a skillet, heat some oil over medium-high heat. Add the marinated pork strips. Cook until they are charred and crispy, about 3-4 minutes on each side.

Serve

On a plate, serve a portion of the garlic rice, a scoop of black beans, and the charred pork strips. Garnish with fresh cilantro and lime wedges.
