Prepare the Potatoes
Peel and chop the potatoes into chunks. Boil them in salted water until tender (about 15-20 minutes). Drain and mash with aji amarillo paste and butter until smooth. Season with salt and pepper to taste.

Blacken the Cobia
Pat the cobia fillets dry and season both sides generously with blackening spice. Heat a skillet over high heat with a bit of oil. Once hot, add the cobia fillets and cook for about 3-4 minutes per side until blackened and cooked through.

Assemble the Dish
On each plate, place a generous scoop of aji amarillo mashed potatoes. Top with a blackened cobia fillet. Spoon pico de gallo over the fish, drizzle with citrus pepper mojo, and garnish with lime wedges.
