    Prepare the Steak

    Season the petite sirloin steak with salt, black pepper, and minced garlic. Let it marinate for at least 30 minutes.

    Cook the Steak

    In a skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare. Remove from pan and let it rest.

    Fry the Eggs

    In the same skillet, add another tablespoon of olive oil if needed, and fry the eggs sunny-side up or to your liking. Set aside.

    Prepare the Potatoes

    Peel and cut the potatoes into wedges. Heat the remaining olive oil in the skillet and fry the potato wedges until golden and crispy. Remove and drain on paper towels.

    Fry the Plantains

    Peel and slice the ripe plantains. In the same skillet, fry the plantain slices until golden brown on both sides. Remove and drain on paper towels.

    Assemble the Dish

    On a plate, serve a portion of rice, top with the steak, fried eggs, crispy potatoes, and fried plantains. Drizzle with aji amarillo sauce.
