Cook the Pork
In the same skillet, add another tablespoon of oil. Season the pork loin slices with salt and pepper. Sauté the pork over medium-high heat until cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of oil. Add the diced onion, bell pepper, and garlic. Sauté until the vegetables are softened, about 4-5 minutes.

Combine Ingredients
Stir in the cooked rice, white corn, peas, aji amarillo paste, and tamari sauce. Pour in the white wine and mix well. Cook for about 5 minutes, stirring frequently, until everything is heated through.

Finish the Dish
Add the sautéed pork back into the skillet and mix until well combined. Adjust seasoning with salt and pepper as needed. Serve hot, topped with fried plantains.
