    Prepare the Sirloin

    Rub the Missouri sirloin with Aji Panca chili powder and adobo seasoning. Let it marinate for at least 30 minutes.

    Cook the Sirloin

    Heat a grill or skillet over medium-high heat. Cook the marinated sirloin for about 4-5 minutes on each side or until it reaches your desired level of doneness. Remove from heat and let it rest.

    Make the Agave Chipotle Sauce

    In a small bowl, mix together agave syrup and chipotle in adobo sauce. Set aside.

    Sauté Vegetables

    In a skillet, heat a little oil over medium heat. Add chopped onion, tomato, and bell pepper. Sauté until the vegetables are soft and slightly caramelized, about 5-7 minutes.

    Prepare Aji Amarillo Mashed Potatoes

    Peel and chop the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and mash with a little butter, salt, and Aji amarillo powder to taste.

    Slice the rested sirloin and place it on a plate. Drizzle with agave chipotle sauce, top with sautéed vegetables, and serve alongside aji amarillo mashed potatoes.
