Prepare Lobster Tails

Broil the Lobster
Preheat the broiler. With kitchen scissors, cut the top shell of each lobster tail lengthwise down the middle, leaving the meat attached at the base. Gently pull the lobster meat out and lay it on top of the shell.

Season the Lobster
In a small saucepan, melt the butter over low heat. Add minced garlic, lemon juice, paprika, salt, and pepper. Brush the mixture over the lobster meat.

Broil
Place the lobster tails on a baking sheet and broil for about 8-10 minutes or until the lobster meat is opaque and slightly browned. Baste with butter halfway through cooking.

Cook Rice
Add the rice to the saucepan and toast for 1-2 minutes. Pour in the chicken broth, add salt and pepper to taste, and bring to a boil.

Simmer
Reduce heat to low, cover, and simmer for 15-20 minutes until rice is fluffy and liquid is absorbed. Remove from heat and let it sit for 5 minutes before serving.
