Prepare the Beets
Preheat your oven to 400°F (200°C). Wash the golden beets thoroughly, then wrap each beet individually in aluminum foil. Place them on a baking sheet and roast in the oven for about 45 minutes, or until they are tender when pierced with a fork.

Prepare the Walnuts
While the beets are roasting, toast the walnuts. Place them in a dry skillet over medium heat and cook for about 5-7 minutes, stirring frequently, until they're fragrant and lightly browned. Remove from heat and let cool. Once cooled, chop them coarsely and toss with freshly cracked black pepper and a pinch of salt.

Glaze the Beets
Once the beets are done roasting, remove them from the oven and let them cool slightly. Peel the skins off (they should come off easily) and cut the beets into wedges. In a mixing bowl, combine the honey and olive oil. Add the beet wedges and toss until they are well-coated in the honey glaze.

Assemble the Dish
On a serving platter, arrange the honey-glazed golden beet wedges. Crumble the goat cheese over the top, and sprinkle the peppered walnuts. If desired, garnish with fresh thyme.
