    Cook the Bacon

    In a large Dutch oven, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the grease in the pot.

    Sear the Beef

    Season the beef tenderloin cubes with salt and pepper. In the same pot, add the beef and sear on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add olive oil if needed and sauté pearl onions, mushrooms, and diced carrots until softened, about 5-7 minutes.

    Combine Ingredients

    Return the beef and bacon to the pot. Add red wine, beef broth, and rosemary. Bring to a boil, then reduce to a simmer.

    Braise the Beef

    Cover the pot and let it simmer on low heat for 2-3 hours, until the beef is tender and the sauce has thickened. Stir occasionally.

    While the beef is braising, prepare French fries according to your preferred method (frying or baking).
