Cook the Bacon
In a large Dutch oven, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the grease in the pot.

Sear the Beef
Season the beef tenderloin cubes with salt and pepper. In the same pot, add the beef and sear on all sides until browned. Remove and set aside.

Braise the Beef
Cover the pot and let it simmer on low heat for 2-3 hours, until the beef is tender and the sauce has thickened. Stir occasionally.

While the beef is braising, prepare French fries according to your preferred method (frying or baking).
