    Prepare the Caramel

    In a medium saucepan, combine the granulated sugar and water. Cook over medium heat, stirring until the sugar dissolves. Once dissolved, stop stirring and allow it to boil until it turns a golden amber color. Immediately pour the caramel into a round baking dish, tilting to coat the bottom evenly. Set aside to cool and harden.

    Make the Flan Mixture

    In a mixing bowl, whisk together the eggs and 3 tablespoons of sugar until well combined. Add the sweetened condensed milk, evaporated milk, and vanilla extract. Mix until smooth.

    Combine and Bake

    Pour the flan mixture over the hardened caramel in the baking dish. Place the baking dish in a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the sides of the flan dish. Bake in a preheated oven at 350°F (175°C) for about 50-60 minutes or until the flan is set.

    Cool and Serve

    Once baked, remove from the oven and let it cool. Refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges of the flan, then invert onto a serving plate to allow the caramel sauce to flow over the top.
