1. Prepare the cherries
In a medium saucepan over medium heat, combine the pitted cherries and granulated sugar. Stir gently until the cherries begin to release their juices and the sugar is dissolved.
2. Add the butter
Add the butter to the saucepan and continue to cook for about 5 minutes, stirring occasionally, until the mixture thickens slightly.
3. Flambé with Kirsch
Remove the saucepan from the heat. Carefully add the Kirsch to the pan, then return to the heat. Using a long lighter or match, ignite the mixture to flambé. Allow the flames to subside (this should take about 1 minute).
4. Serve
Scoop the vanilla ice cream into individual serving bowls. Spoon the hot cherry mixture over the ice cream and serve immediately.
