Cheesecake Preparation

    Prepare the crust

    Preheat the oven to 325°F (163°C). In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and let cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese until smooth. Add the sugar, sour cream, eggs, and vanilla extract, mixing until fully incorporated and smooth.

    Bake the cheesecake

    Pour the cheesecake filling over the cooled crust and smooth the top. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

    Chill the cheesecake

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.

Strawberry Sauce Preparation

    Cook the strawberries

    In a medium saucepan, combine the fresh strawberries, sugar, and lemon juice. Cook over medium heat, stirring gently until the strawberries break down and the sauce thickens, about 10-15 minutes.

    Cool the sauce

    Remove from heat and let the sauce cool to room temperature. It can be stored in the refrigerator until ready to use.
