Prepare Pie

    Prepare the Apples

    Peel, core, and slice the Granny Smith apples. In a large bowl, combine the apples, granulated sugar, cinnamon, nutmeg, and lemon juice. Toss to coat the apples evenly.

    Assemble the Pie

    Preheat the oven to 425°F (220°C). Roll out one pie crust and fit it into a 9-inch pie dish. Fill the crust with the apple mixture and dot with butter. Cover with the second pie crust, crimp the edges, and cut a few slits in the top crust to allow steam to escape.

    Bake the Pie

    Bake the pie in the preheated oven for 45-50 minutes or until the crust is golden brown and the apples are tender. Remove from the oven and let it cool slightly.

Prepare Rum Toddy Sauce

    Make the Sauce

    In a saucepan over medium heat, melt the butter. Stir in the brown sugar, dark rum, vanilla extract, and cinnamon. Bring to a simmer and cook for 5-7 minutes until slightly thickened. Remove from heat and stir in the heavy cream.

    Slice the warm apple pie and serve with a generous scoop of vanilla ice cream. Drizzle with the warm rum toddy sauce.
