Preparing the Ribs

Season the Ribs
Preheat your oven to 300°F (150°C). In a small bowl, mix salt, black pepper, and garlic powder. Rub this mixture all over the baby pork back ribs.

Bake the Ribs
Place the seasoned ribs on a baking sheet lined with aluminum foil. Cover with another piece of foil and bake for about 2.5 hours until tender.

Prepare the Barbeque Sauce
While the ribs are baking, in a saucepan combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, honey, smoked paprika, mustard powder, salt, and black pepper. Cook over medium heat, stirring occasionally, for about 15 minutes until thickened.

Prepare the Pineapple Fritters
In a bowl, mix the all-purpose flour, cornstarch, baking powder, sugar, and salt. Add the beaten egg and water to the dry ingredients and mix until smooth. Dip the pineapple slices into the batter and fry in heated oil until golden brown on both sides. Drain on paper towels.

Serve the barbequed baby pork back ribs with pineapple fritters on the side, drizzled with any remaining barbeque sauce.
