Prepare the Bagel Dough
In a large bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. Add flour, salt, and olive oil, then knead until smooth and elastic.

Let the Dough Rise
Cover the bowl with a damp cloth and let the dough rise in a warm place for about 1 hour or until doubled in size.

Shape the Bagels
Preheat your oven to 425°F (220°C). Once the dough has risen, divide it into 8 equal pieces. Shape each piece into a ball and poke a hole in the center to form a bagel shape.

Boil the Bagels
In a large pot, bring water to a boil. Carefully drop bagels into the boiling water, cooking for 1-2 minutes on each side. Remove and let cool on a wire rack.

Bake the Bagels
Place the boiled bagels on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.

Assemble the Sandwich
Slice the bagels in half. Layer with your choice of deli meat and cheese. Serve with mayonnaise and mustard on the side.
