Make the Dough
In a large mixing bowl, combine flour, sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Divide dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Fillings
For the cream cheese filling, beat cream cheese with powdered sugar and vanilla extract until smooth. Set aside. Prepare your choice of fruit filling (cherry, apple, or pumpkin) as desired.

Assemble the Hand Pies
Preheat the oven to 400°F (200°C). Roll out one disc of dough on a floured surface to about 1/8 inch thick. Cut into circles (about 4-5 inches in diameter). Place a tablespoon of filling in the center of each circle. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.

Bake
Place the assembled hand pies on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown. Allow to cool before serving.
